Asparagus – Chocked full of vitamin K, researchers now feel that this food is an anti-inflammatory nutrient as well as an anti-oxidant. Asparagus cancer research is elementary, and not yet validated by large-scale studies involving humans and diet. But the trends in animal studies and cell studies are clear – asparagus and asparagus extracts can positively affect changes in cancer cells.
Broccoli – According to researchers at Johns Hopkins University. Just 5 grams (0.17 ounces) of sprouts contain concentrations of the compound glucoraphanin equal to that found in 150 grams (5.2 ounces) of mature broccoli which can help fight against cancer.
Green Peas – Instead of reaching for a handful of potato chips, this springtime favorite is great in adding Vitamin K to your diet and fighting osteoporosis. According to Care2, peas contain high amounts of a health-protective polyphenol called coumestrol. A study in Mexico City determined you only need 2 milligrams per day of this phytonutrient to help prevent stomach cancer.
Sunflower sprouts – They are a nutritional addition to any salad. One ounce has a total of 10mg of vitamin E. Sunflower seeds are excellent for the hair and skin because the sprouts also contain copper.
Chives – Growing chives in your own garden is a perennial that will come back every year. Chives helps digestion, aids in constipation and more. Chives are high in zinc, magnesium, potassium and iron. Chives have been found to be beneficial in treating esophageal, stomach, prostate, and gastrointestinal tract cancers. Chives can help increase HDL, a good cholesterol, and lower the risk of heart disease and stroke.
